Founded in 1893, Convalmore distillery is one of Dufftown finest, situated in the heart of Speyside on the River Fiddich. This recent addition to their 32 Year Old range was first distilled in 1984 and placed into American oak hogsheads. It has a soft and oakey palate with hints of herbs and citrus, whilst the finish is gentle with notes of more oak and a touch of shortbread.
Flavour Profile: Nose
Mellow base aroma, soft and sweet, like buttery pastry, lightly dusted with nutmeg. There's a fruity filling of gently sour apples, spiced pears and ripe melon, orange peel too. Spicy notes begin to develop with clove and cinnamon-laced biscuits balanced by candied lemon, sharp apple and an underlying green herbiness.
Flavour Profile: Palate
Smooth, sweet and fruity with a trace of crisp acidity and oak spice to balance the sweetness before it can cloy. The apples and pastry from the nose persist, now caramalised and bitter-sweet as part of the fruity centre palate. A splash of water to taste becomes slightly sweeter, the is savoury and light floral notes appear, the oak picks up char and the spice is toasted and fragrant.

Warming, spicy and lingering with liquorice that fades to stewed, basked and fresh apples and warming oak that persists in closing, bitter-sweet flavours.
